This article essentially analyzes dietetics in the eighteenth century on three differente levels: as a source of alimentation, as a way of life for individuals, and as a way of life for the social organism. On all three levels dietetics always had two overall objectives: the physical health of the body and the moral health of the individual. Based on these generic concepts, the caraacteristics of these two goals at each of the three levels mentioned above are analyzed, providing, in the author's view, an explanation of the structure of dietectics in the 1700s.
